**Produce Tip** Break the habit of wasting fresh produce. Foods spoil quicker in their natural state (unprocessed, without preservatives), so they should be eaten within the first 3-4 days of purchase, or from being plucked. Buy what you need at the moment. Stop hoarding! This may increase grocery trips but minimize shopping time and money spent!
Cauliflower is no stranger to us- more of a childhood favorite, cooked in butter, salt, and pepper, as we remember it. In it's RAW form, Cauliflower has an uneven shape and a frill, hard texture that intimidates my RAW abilities. Inspiration comes in infinite ways so let's prepare some Cauliflower.
Serving 4-5
Salad Ingredients:
1 Medium Organic Cauliflower Bunch
1 Medium Organic Red Onion
1 Large Red Pepper
1/2 Cup of Fresh Cilantro
12 Chopped (or finely plucked) Fresh Curry Leaves
1 Tbsp of Paprika
1 1/2 Tbsp of Cumin
1/2 Squeezed Lemon
Mix Contents together in a glass/wooden bowl- we prefer to use our hands or a wooden spoon Now, on to the dressing!
1 Small Organic ripe Tomato
1/4 Red Pepper
1/4 Red Pepper
1/2 Clove of Garlic
1/4 Cap full of Apple Cider Vinegar
1/2 Squeezed Lemon
1 Shake of Cayenne Pepper
1 1/2 Tbsp of Olive Oil
3 Chopped (or finely Plucked) Fresh Curry Leaves
1 Tbsp Curry Powder
1 Tbsp Cumin
4 Shakes of Pink Himalayan Sea Salt
1 Tbsp Curry Powder
1 Tbsp Cumin
4 Shakes of Pink Himalayan Sea Salt
Blend Together w/ Magic bullet (or regular kitchen sized blender/Vitamix) until liquefied. pour over Cauliflower Salad. Stir until seasons are mixed. Chill for 1 hour- Enjoy! :)
What Nutrients is this Meal packing?
Cauliflower has many nutrients that would be beneficial to someone with diabetes. The one most prominent in this meal is Vitamin B6 which also contributes to a healthy cardiovascular and immune system! It will keep your skin healthy and has been used therapeutically to help treat heart disease, kidney stones, and PMS. (ladies!)
Now don't get too excited yet, there are a few antagonists to B6: [alcohol, birth control, caffeine, cooking (EAT RAW!), tobacco and PCBs]
(Bad habits must be broken before we can take on Good ones!)
Vitamin B6 (in our dish) <-- Our main ingredient Cauliflower started this B6 train and the garlic clove even adds a bit to the mix; but red pepper is the 2nd best source of B6.
The beautiful red repper is also the number one source of Vitamin C!
1.5 cups will give you over twice the amount you need in a day. Make sure you choose a large one or get a few!
The tomato (from the dressing) also contributes some Vitamin C but more importantly it's one of the best sources of Lycopene which is very important for prostate health, bladder, breast and cervix cancer. (Also in watermelon)
The nutrient list goes on but those mentioned above are packing a punch in this dish!
